Detox Cabbage Soup

Hello all! We have gotten a large request for the detox cabbage soup recipe, so here it is Enjoy 🙂  Cabbage helps to detoxify the colon and stomach, serves as a blood cleanser, provides antioxidants and is also a great source of fiber.

Cabbage Soup Recipe

Detox Cabbage Soup
Prep: 15 min, Cook: 25 min.
• 2 tsp. olive oil
• 3/4 head cabbage, chopped, or 1 bag prepared coleslaw mix
• 3/4 onion and/or garlic, finely chopped
• 1-1/4 celery stalks, finely chopped
• 1-1/4 tsp. parsley flakes
• 2 cups chicken stock (low sodium)
• Creole seasoning (optional)
• 1 can of Cream of celery and chicken soup
HAVE 2 BOWLS LUNCH AND DINNER
Heat oil in a heavy stockpot over medium high heat.
Sauté next 6 ingredients 8-10 minutes, or until softened.
Stir in stock.
Reduce heat to low and simmer 15-20 minutes, or until vegetables are tender.

Healthy Banana Bread

Hello everyone here is a recipe for a healthy version of banana bread.

INGREDIENTS

  1. 6tablespoons unsweetened applesauce
  2. 1/4cup honey
  3. 2tablespoons dark brown sugar
  4. 2large eggs
  5. 3large ripe bananas, mashed (about 1 1/2 cups)
  6. 1/4cup unsweetened almond milk
  7. 1teaspoon baking soda
  8. 1teaspoon pure vanilla extract
  9. 1/2teaspoon ground cinnamon
  10. 1 1/2cups white whole-wheat flour

DIRECTIONS

  1. Heat oven to 325°F. Grease an 8-by-4 inch loaf pan.
  2. In a large bowl, combine the applesauce, honey, and brown sugar. Add the eggs and beat well. Stir in the mashed bananas and almond milk. Add the baking soda, vanilla extract, and cinnamon and stir.
  3. Gradually fold the flour into the banana mixture until just combined (do not overmix).
  4. Pour the batter into the prepared pan and bake until a toothpick inserted into the center of the loaf comes out clean, 50-60 minutes. Cover the top with foil if it begins to brown too quickly. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Blueberry Chopped Chicken Salad

Blueberry Chicken Chopped Salad

 

  • 2 boneless, skinless chicken breasts
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 head Romaine lettuce, finely chopped
  • 1 pint (2 cups) fresh blueberries
  • 1 cup roughly-chopped toasted pecans
  • 2/3 cup diced red onion
  • Dijon vinaigrette (see below)

Dijon Vinaigrette

  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • Pinch of salt and black pepper

To make the salad:

Season chicken breasts on both sides generously with salt and pepper.

  1. Heat oil in a large sauté pan over medium-high heat.  Add chicken breasts and cook for 4-5 minutes per side, until the chicken is cooked through and no longer pink inside.
  2. Transfer chicken breasts to a separate plate and let rest for at least 5-10 minutes.  Then chop into small, bite-sized pieces.
  3. Add the chicken to a large bowl with the lettuce, blueberries, pecans, red onion, and vinaigrette. Toss to combine.  Serve immediately.

To make the vinaigrette:

Whisk all ingredients together until combined.

Fruit Infused Water

We all know how important it is important to keep your body hydrated, however this is especially important in the spring and  summer. When the weather is hot and you are spending much of the day outside and  being active,  Every single cell  and organ in the your body needs water to function properly. A lack of water can affect the body immensely. Water helps the body in several ways.  One of the main things it does is help with proper digestion. It also aids in getting rid of waste through urination, perspiration, and bowel movements. It keeps the body temperature normal. Water also helps to lubricate and cushion your joints. A lot of people don’t drink water because they say it has no taste and they need flavor, therefore they drink juices and sodas. That is just a myth because there are may ways to add flavor to water. Try fruit infused water. I love adding lemon to my water. There are several fruit assortments that will give your water a boost.

 

Here are a few combinations to try:

You can try basically any fruit combination. Make it your own! Fruit infused water is a refreshing, nutritional way to stay hydrated!
